ow to Cook Crayfishes.

This is sort of a tutorial on the Swedish rituals around crayfishes.
It is split in three parts.
How to Catch Crayfishes.
How to Cook Crayfishes.
How to Eat Crayfishes.

Take two big cauldrons and fill them with water.
In one of them you add the following:
One piece of Sugar.
One bottle of Light Pale Beer.
Salt.
Black Pepper.
A lot of Dill (even the flowers).

There are no specific measurements of the ingredients. Everyone has got his own secret recipe on how to make the crayfishes taste exactly as they like it.

Make both of the cauldrons boil. Then start the procedure.
Take one crayfish and wash it under pouring water.
Then put it in the boiling clean water. You will notice almost immediately how the black and blue color pigments of the crayfish shell die, leaving only the red one.
When you have about five red crayfishes in the first cauldron, move them to the second one, and let them stay in it for a couple of hours, boiling very softly.
Continue until all the crayfishes are in the second cauldron.



Await the guests.
Let them take place at the table.
Bring forth the crayfishes.
Await the unison “OOOOH!!!” from your guests (If none of them have ever bee on a crayfish party before, make sure they know they have to say “OOOOH!!!” when you bring forth the crayfishes (or else it won’t be no real crayfish party)).

Make yourself ready to eat.
